Ingredients

1 cup chopped pecans
½ cup steel cut oats
½ cup granola
¼ cup coconut oil
¼ cup chopped almonds
¼ cup fresh raspberries
¼ cup raisins
1 medium banana, mashed
1 egg white
1 tablespoon peanut butter
1 tablespoon honey
1 teaspoon vanilla extract
½ teaspoon baking powder
¼ teaspoon ground cinnamon
¼ cup dark chocolate chips, or more to taste

Directions

  1. Preheat the oven to 325 degrees F (165 degrees C). Line a 9x13-inch baking dish with parchment paper.

  2. Combine pecans, oats, granola, coconut oil, almonds, raspberries, raisins, mashed banana, egg white, peanut butter, honey, vanilla extract, baking powder, and cinnamon in a large bowl. Mix until well combined.

  3. Transfer mixture to prepared baking dish and press into a thin layer with your hands, you may need to coat your hands with coconut oil so the mixture doesn't stick. Sprinkle chocolate chips on top.

  4. Bake in the preheated oven for 15 minutes. Lower oven temperature to 200 degrees F (95 degrees C), and cook until golden brown, about 45 minutes. Let cool completely before slicing into bars.
