Shrimp Jalapeno Poppers recipe

1 (8 ounce) package cream cheese, softened
1 (8 ounce) package shredded sharp Cheddar cheese
¼ cup mayonnaise
15 large shrimp - peeled, deveined and butterflied
2 eggs, beaten
1 ½ teaspoons milk
1 ½ cups dry bread crumbs

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a baking sheet with cooking spray.

  2. Mix cream cheese, Cheddar cheese, and mayonnaise together in a bowl. Spread on the inside of each butterflied shrimp.

  3. Whisk eggs and milk together in a bowl. Place bread crumbs on a plate.

  4. Dip each stuffed shrimp into the egg and milk mixture, roll over breadcrumbs to coat. Arrange in a single layer on the prepared baking sheet.

  5. Bake in the preheated oven until lightly browned, about 30 minutes.
