Ingredients

½ medium onion, chopped
½ medium green bell pepper, chopped
3 tablespoons Cajun seasoning (such as Tony Chachere's®)
2 tablespoons garlic salt
1 tablespoon lemon-pepper seasoning
2 (8.5 ounce) packages cornbread mix (such as Jiffy®)
⅔ cup milk
2 large eggs
1 (15 ounce) can cream-style corn
1 medium jalapeno pepper, seeded and chopped
1 cup shredded Cheddar cheese

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan and a large skillet with cooking spray.

  2. Heat the skillet over medium-high heat. Add ground beef, onion, and bell pepper, cook and stir until beef is browned and crumbly, 5 to 7 minutes. Stir in Cajun seasoning, garlic salt, and lemon-pepper seasoning. Remove from heat and drain fat from the skillet.

  3. Mix cornbread mix, milk, and eggs together in a bowl. Mix in corn and jalapeno.

  4. Spread 1/2 of the cornbread mixture into the prepared pan. Layer meat mixture and top with Cheddar cheese. Spread remaining cornbread mixture on top.

  5. Bake in the preheated oven until golden and a toothpick inserted into the center comes out clean, 20 to 30 minutes.
