6 (6 ounce) boneless pork chops
1 (32 ounce) jar sauerkraut, drained
6 potatoes, sliced
4 Golden Delicious apples, chopped
8 carrots, peeled and sliced
1 large sweet onion (such as Vidalia®), chopped
⅓ cup red wine
¼ teaspoon ground cinnamon
1 bay leaf, or to taste
freshly ground black pepper to taste
1 tablespoon water, or as needed

Directions

  1. Heat a large skillet over medium-high heat. Cook pork chops until browned, 3 to 4 minutes per side.

  2. Combine sauerkraut, potatoes, apples, carrots, onion, red wine, cinnamon, bay leaf, and black pepper in a slow cooker. Add the browned pork chop. Pour 1 tablespoon water into the skillet, scrape up the glaze, and transfer to the slow cooker.

  3. Cook on High until pork and vegetables are fork-tender, 6 to 8 hours.
