1 pound ground chicken
½ (4 ounce) packet saltine crackers, crushed, or more as needed
1 (28 ounce) jar marinara sauce

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a baking pan with cooking spray, line with foil.

  2. Whisk eggs and sour cream in a large bowl until fluffy, about 2 minutes. Add Parmesan cheese, Italian seasoning, garlic powder, red pepper flakes, salt, and pepper, stir to combine. Add chicken, mix with your hands until well combined. Mix in crushed crackers until you can form a ball with the mixture. Use your hands to roll into 8 to 10 equal-sized meatballs, place in the prepared pan.

  3. Bake in the preheated oven until no longer pink in the center, about 15 minutes. An instant-read thermometer inserted into the center of each meatball should read at least 165 degrees F (75 degrees C).

  4. Place marinara sauce in a medium saucepan, add meatballs and simmer over low heat until warm, about 10 minutes.
