Ingredients

½ cup olive oil, or as needed
1 head garlic, cloves peeled and coarsely chopped
1 dried red chile pepper, seeded and chopped, or to taste
1 pound uncooked medium shrimp, peeled and deveined
salt to taste
2 tablespoons chopped fresh parsley, or to taste

Directions

  1. Heat 1/4 inch olive oil in a skillet over medium heat. Add garlic and chile pepper and saute until fragrant, about 1 minute. Remove garlic and chile peppers with a slotted spoon and set aside. Add shrimp to the hot oil. Cook and stir until opaque in color, about 3 minutes.

  2. Return garlic and chile peppers to the skillet. Season with salt and cook for 2 more minutes. Sprinkle with fresh parsley and serve immediately.
