Ingredients

2 cups packed brown sugar
1 cup shortening
2 eggs
2 cups applesauce
½ cup cold coffee
3 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves

Directions

  1. Beat brown sugar, shortening, and eggs together with an electric mixer in a large bowl until smooth. Add applesauce and coffee, beat until smooth.

  2. Mix flour, baking soda, salt, cinnamon, nutmeg, and cloves together in a bowl, add to the wet ingredients and stir until the mixture comes together into a cookie dough.

  3. Refrigerate dough at least 2 hours to overnight.

  4. Preheat oven to 375 degrees F (190 degrees C). Lightly grease baking sheets.

  5. Scoop dough by rounded teaspoon onto prepared baking sheets.

  6. Bake in preheated oven until the cookie tops bounce back when lightly pressed with a fingertip, 9 to 12 minutes. Cool cookies on sheets for 10 minute before moving to wire cooling racks to cool completely.

My MomMom shared this recipe for me, and I have never used another applesauce cookie recipe since. I would have never thought to use cold coffee in a recipe. She did this with other recipes, too! Enjoy!
