Mashed Potatoes with Olive Oil and Parmesan recipe

4 medium Yukon Gold potatoes, unpeeled
salt to taste
¼ cup 35% heavy whipping cream
2 tablespoons extra-virgin olive oil
4 tablespoons freshly grated Parmesan cheese

Directions

  1. Place potatoes in a medium saucepan, cover with cold water. Season the water generously with salt. Bring to a boil, reduce heat and simmer, covered, until potatoes can be easily pierced with a fork, 20 to 25 minutes.

  2. Drain potatoes and mash to the desired consistency. Fold in cream and olive oil. Stir in Parmesan cheese until melted.
