Leftover Turkey Quiche recipe

3 cups shredded raw sweet potatoes
⅓ cup butter, melted
3 eggs
½ cup milk
salt and ground black pepper to taste
1 ¼ cups diced cooked turkey
1 cup shredded Cheddar cheese

Directions

  1. Preheat the oven to 425 degrees F (220 degrees C).

  2. Press sweet potatoes into the bottom of a 9-inch pie dish. Pour melted butter over potatoes.

  3. Bake in the preheated oven until golden and firm, about 20 minutes.

  4. Whisk, eggs, milk, salt, and pepper together in a small bowl.

  5. Spread turkey, Cheddar cheese, and onion over the sweet potato crust. Cover with the whisked egg mixture.

  6. Place quiche in the oven and reduce temperature to 350 degrees F (175 degrees C). Bake until top is beginning to brown, 20 to 25 minutes.
