3 tablespoons vegetable oil
5 cloves garlic, chopped
3 stalks celery, chopped
2 red bell peppers, seeded and chopped
1 medium onion, chopped
2 teaspoons dried oregano
1 teaspoon Creole seasoning (such as Tony Chachere's®), or more to taste
ground black pepper to taste
⅓ cup all-purpose flour
3 cups chicken stock
2 cups water
1 cup uncooked instant rice (such as Minute®)
16 ounces frozen cut okra
14 ounces smoked kielbasa sausage, halved and sliced thinly
1 (14 ounce) can diced tomatoes, undrained
1 dash hot sauce, or to taste
1 pound shredded cooked chicken

Directions

  1. Heat vegetable oil over medium heat in a large stock pot. Add garlic, celery, bell peppers, onion, oregano, Creole seasoning, and pepper. Cook, stirring occasionally, until vegetables are crisp-tender, about 10 minutes.

  2. Sprinkle flour over vegetable mixture and mix well. Cook until golden brown, about 5 minutes.

  3. Pour in chicken stock, water, rice, okra, sausage, tomatoes, and hot sauce. Bring to a boil, reduce heat and simmer until sausage is heated through and vegetables are tender, about 5 minutes. Stir in cooked chicken and heat through, about 5 minutes more. Adjust seasonings to taste.
