1 teaspoon cinnamon
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon ground black pepper, or to taste
4 boneless pork chops, about 3/4-inch thick
1 tablespoon vegetable oil, or more to taste
1 onion, thinly sliced
3 cloves garlic, minced
1 pound fresh green beans, trimmed
2 large tomatoes, diced
½ cup chicken broth

Directions

  1. Mix cinnamon, cumin, salt, and pepper together in a bowl. Sprinkle mixture over both sides of pork chops.

  2. Heat oil in a large pan over medium heat. Add pork chops and brown, 3 to 4 minutes per side. Transfer pork chops to a plate. Add onion and cook until translucent, about 2 minutes. Stir in garlic and cook 30 to 60 seconds. Mix in green beans and cook, stirring occasionally, another 2 minutes. Add tomatoes and chicken broth and bring mixture to a simmer, about 5 minutes.

  3. Return pork chops to pan, cover, and reduce heat to low. Cook until pork chops are not longer pink in the center and an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C), 15 to 20 minutes. Season with salt and pepper before serving.
