½ pint cherry tomatoes, halved
1 red bell pepper, diced
1 orange bell pepper, diced
1 yellow bell pepper, diced
½ cup edamame (green soybeans)
½ cup crumbled feta cheese with herbs
1 teaspoon dried basil
½ teaspoon lemon-pepper seasoning
salt to taste
1 avocado, diced
¾ cup cashews
1 tablespoon extra-virgin olive oil, or to taste
1 tablespoon red wine vinegar, or to taste

Directions

  1. Mix grapes, tomatoes, red bell pepper, orange bell pepper, yellow bell pepper, edamame, and feta cheese with herbs in a bowl. Add basil, lemon pepper, and salt to vegetable-grape mixture, toss to coat. Add avocado and cashews to vegetable-grape mixture just before serving. Drizzle olive oil and vinegar over salad, toss to coat.
