1 cup cornmeal
1 cup shredded carrot
1 cup whole wheat panko bread crumbs
¾ cup chopped fresh cilantro
½ cup extra-virgin olive oil
2 tablespoons chili powder
2 teaspoons sea salt
2 tablespoons water, or as needed

Directions

  1. Combine black beans, cornmeal, shredded carrot, panko bread crumbs, cilantro, olive oil, chili powder, and salt in a bowl. Mash together by hand, adding water as needed until the mixture is firm enough to form patties.

  2. Form mixture into 8 bun-sized patties. Heat a nonstick frying pan over medium heat and cook patties, turning once, until heated through, about 8 minutes total.
