1 sweet potato, diced
1 avocado, peeled and diced
1 tablespoon olive oil
1 teaspoon salt-free seasoning blend (such as Mrs. Dash®)
1 teaspoon garlic powder
1 pinch ground black pepper
1 teaspoon grated Parmesan cheese

Directions

  1. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add sweet potato, cover, and steam until tender, 5 to 7 minutes.

  2. Place avocado in a bowl, add olive oil, salt-free seasoning blend, garlic powder, and black pepper and stir to coat. Gently stir sweet potato into avocado mixture, top with Parmesan cheese.

My favorite quick-and-easy go-to lunch! So delicious, also makes the perfect side dish! I have never actually measured any of the ingredients, I just make it the way I like it. This is a really simple recipe where you can just add the ingredients to taste. I'm a busy mom and this is something quick I usually make for my lunch everyday. You could also serve this as a tasty side dish.
