Ingredients

2 cups all-purpose flour, sifted
1 teaspoon salt
⅔ cup shortening (such as Crisco®)
6 tablespoons ice water, or as needed
4 large tomatoes, sliced
⅔ cup chopped green onions
10 leaves fresh basil, chopped
salt and ground black pepper to taste
2 cups grated Cheddar cheese
2 cups grated mozzarella cheese
2 cups mayonnaise (such as Duke's®)

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Sift together flour and salt in a bowl. Cut in shortening with a fork or pastry blender until the mixture resembles small peas. Add ice water, 1 tablespoon at a time, tossing with a fork, until flour mixture is moistened. Add just enough water that a handful of dough clumps together when squeezed. Form dough into a ball, roll out into a large rectangle, and press gently into the bottom and up the sides of a 9x12-inch casserole.

  3. Bake crust in the preheated oven for 10 to 12 minutes.

  4. Layer sliced tomatoes on baked crust. Sprinkle with green onions and basil, and season with salt and pepper.

  5. Mix together Cheddar cheese, mozzarella cheese, and mayonnaise in a bowl. Spread cheese mixture over tomatoes.

  6. Bake until edges are lightly browned and cheese mixture is melted and bubbly, 40 to 50 minutes.
