Ingredients

1 pound dry black-eyed peas
2 (32 fluid ounce) containers vegetable broth
2 cups cubed ham
1 cup chopped carrots
1 cup chopped celery
1 ham bone
1 medium onion, diced
2 tablespoons Worcestershire sauce
salt and ground black pepper to taste
1 pound collard greens - rinsed, trimmed and chopped

Directions

  1. Sort and rinse peas then place into a slow cooker and cover with 8 to 10 cups of cool water. Let soak, 8 hours to overnight.

  2. Drain water from peas and add broth, ham, carrots, celery, ham bone, onion, Worcestershire, salt, and pepper.

  3. Cover and cook on High for 5 hours. Stir in collard greens and cook until tender, about 30 minutes more.
