1 (14.5 ounce) can diced tomatoes
1 (14 ounce) bag Birds Eye® Recipe Ready Mirepoix
1 tablespoon chopped parsley

1 (24 ounce) container refrigerated prepared mashed potatoes

Directions

  1. Preheat oven to 400 degrees F.

  2. Brown beef in large nonstick skillet, drain fat.* Add tomatoes and Recipe Ready Mirepoix and bring to a boil over high heat. Reduce heat to low and simmer 10 minutes. Stir in parsley and salt.

  3. Turn mixture into 1-1/2 quart casserole dish. Evenly top with mashed potatoes.

  4. Bake 20 minutes or until potatoes are golden and mixture is bubbling.
