⅓ cup sake
2 tablespoons unsalted butter
1 clove garlic, minced
⅓ cup heavy whipping cream
2 teaspoons basil
2 teaspoons parsley
salt and ground black pepper to taste
¼ cup crumbled Gorgonzola cheese
1 tablespoon grated Parmesan cheese

Directions

  1. Combine sake, butter, and garlic into a saucepan over medium heat. Cook and stir until the mixture has thickened and reduced in volume by one half, about 3 minutes. Add cream to the sake mixture, stir until reduced by one fourth, about 3 minutes. Season with basil, parsley, and salt and pepper.

  2. Stir Gorgonzola cheese and Parmesan cheese slowly into the sake mixture, simmer and stir continuously until smooth, about 3 minutes. Simmer until flavors combine, about 5 minutes.

Recipe Note

I was messing around in the kitchen one day and thought sake would complement Gorgonzola really well in a sauce. I would suggest topping a dish of pasta primavera with this sauce.
