1 green bell pepper, seeded and diced
3 stalks celery, diced
3 jalapeno peppers, seeded and diced
3 green onions, diced
2 tablespoons all-purpose flour
1 pound Mexican-style processed cheese food (such as Mexican Velveeta®), cut into 1/2-inch cubes
1 (8 ounce) package pepper Jack cheese, cut into 1/2-inch cubes
1 cup whole milk
1 cup heavy whipping cream

Directions

  1. Melt butter in a saucepan over medium heat and add onion, green bell pepper, celery, jalapeno peppers, and green onions. Cook, stirring occasionally, until soft and slightly brown, about 5 minutes. Stir in flour until combined.

  2. Reduce heat to low and add processed cheese food, pepper Jack cheese, milk, and heavy cream to the saucepan. Stir continuously until cheese is melted, about 10 minutes.
