Quinoa with Sausage, Kale, and White Beans recipe

Ingredients

2 cups chicken stock, or more as needed
1 cup quinoa
1 tablespoon extra-virgin olive oil
1 pound bulk pork sausage
1 onion, finely chopped
1 (14.5 ounce) can petite diced tomatoes, drained
1 (14.5 ounce) can great Northern beans, drained
2 cups chopped kale
salt and ground black pepper to taste

Directions

  1. Bring chicken stock and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes.

  2. Meanwhile, heat olive oil in a large skillet over medium heat. Add sausage and onion and cook, breaking sausage up as it browns, 5 to 10 minutes. Mix in tomatoes, beans, and kale. Add a splash of chicken stock if needed to wilt kale. Cook until tomatoes and beans are heated through, 10 to 15 minutes.

  3. Stir cooked quinoa into the skillet. Season with salt and pepper.
