Quinoa, Grape, and Prune Salad recipe

Ingredients

2 cups water
1 cup quinoa
1 cup halved red grapes
½ cup Sunsweet® D'Noir™ Prunes, chopped
½ cup thinly sliced celery
½ cup sliced green onion
½ cup chopped toasted walnuts
⅓ cup extra-virgin olive oil
¼ cup red wine vinegar
1 tablespoon honey
½ teaspoon salt, or to taste
1 clove garlic, minced
Freshly ground black pepper to taste

Directions

  1. Rinse quinoa in a fine mesh strainer, drain well. Bring water and quinoa to a boil in a medium saucepan, reduce heat and simmer, covered, for 12 minutes. Let stand for 10 minutes, then fluff with a fork and let cool.

  2. Place in a large bowl with remaining salad ingredients. Whisk together all dressing ingredients and pour over salad, toss well to coat. Cover and chill for at least 1 hour.
