Pumpkin Bars recipe

Ingredients

1 cup all-purpose flour
½ cup oatmeal
½ cup brown sugar
½ cup unsalted butter, at room temperature
2 cups pumpkin puree
1 (13 ounce) can evaporated milk
½ cup white sugar
½ cup brown sugar
2 large eggs
3 teaspoons ground cinnamon
1 ½ teaspoons ground ginger
¾ teaspoon ground cloves
½ teaspoon salt

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Combine flour, oatmeal, brown sugar, and butter for crust in a large bowl, mix until crumbly. Press into a 9x13-inch pan.

  3. Bake in the preheated oven until golden brown, about 15 minutes. Remove and set on a wire rack to cool.

  4. Meanwhile, combine pumpkin puree, evaporated milk, white sugar, brown sugar, eggs, cinnamon, ginger, cloves, and salt for filling in a large bowl, beat with an electric mixer until smooth. Poor into the cooled crust.

  5. Return to the oven and bake until filling is set and no longer jiggles, about 40 minutes.

  6. Remove from the oven and allow to cool completely before cutting into bars.

Recipe Note

This tastes just like pumpkin pie, only in bars. A wonderful dessert served with whipped cream. They also freeze easily.
