3 cups Quaker® Oats (Quick or Old Fashioned, uncooked)
1 teaspoon pumpkin pie spice
½ teaspoon baking powder
1 (15 ounce) can pumpkin puree
½ cup nonfat milk
½ cup water
⅓ cup maple syrup
1 egg, beaten
1 teaspoon vanilla extract
1 cup chopped apples
⅓ cup chopped pecans

Directions

  1. Heat oven to 350 degrees F. Spray 2-quart baking dish with nonstick cooking spray.

  2. In large bowl, stir together oats, pumpkin pie spice and baking powder.

  3. Stir in pumpkin, milk, water, syrup, egg and vanilla extract until well combined. Stir in apples.

  4. Pour into baking dish. Sprinkle with pecans.

  5. Bake 30 minutes or until knife inserted near center comes out clean.

  6. Let stand 10 minutes before serving.
