2 teaspoons vegetable oil
⅓ cup chopped onion
2 (15.5 ounce) cans lentils, drained
1 (14.5 ounce) can petite diced tomatoes, undrained
1 (1.25 ounce) package McCormick® Original Chili Seasoning Mix
2 tablespoons crumbled goat cheese or feta cheese

Directions

  1. Heat oil in large skillet on medium heat. Add onion, cook and stir 2 to 3 minutes or until translucent.

  2. Stir in lentils, tomatoes and Seasoning Mix. Bring to boil. Reduce heat, cover and simmer 10 minutes, stirring occasionally.

  3. Spoon into serving bowl. Sprinkle with cheese.
