1 cup finely chopped onion
⅔ cup finely chopped green bell pepper
1 cup beef stock
1 cup ketchup
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon whole-grain mustard
4 cloves garlic, minced
1 teaspoon chili powder
2 cups cooked pulled pork without sauce
3 dashes hot pepper sauce (such as Tabasco®), or to taste
salt and ground black pepper to taste
10 mini Kaiser rolls, split and warmed

Directions

  1. Melt butter in a large nonstick skillet over medium heat. Add onion and bell pepper, and cook, stirring, about 5 minutes. Add beef stock, ketchup, brown sugar, Worcestershire sauce, mustard, garlic, and chili powder, stir until well mixed.

  2. Mix in pulled pork until well combined. Season with hot sauce, salt, and pepper. Bring mixture to a boil, reduce heat to low, and allow to bubble gently until thickened and reduced, 20 to 25 minutes.

  3. Place about 1/2 cup of the mixture on each sliced mini Kaiser roll and serve immediately.

Recipe Note

If you have leftover pulled pork, with no sauce on it, turn it into sloppy Joe-type sandwiches for a twist on hamburger. We like fresh corn on the cob and coleslaw.
