24 jumbo pasta shells
1 pound lean ground beef
1 cup chopped green bell pepper
½ cup chopped onion
½ teaspoon salt
1 (14.5 ounce) can dark red kidney beans, drained and rinsed
1 cup mozzarella cheese
¼ cup prepared basil pesto
1 (28 ounce) jar pasta sauce, warmed
½ cup grated Parmesan cheese

Directions

  1. Bring a large pot of lightly salted water to a boil. Cook pasta shells in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain.

  2. Cook and stir ground beef, bell pepper, onion, and salt in a skillet over medium heat until beef is browned and crumbly, 5 to 10 minutes, drain. Mix kidney beans, mozzarella cheese, and pesto into ground beef mixture.

  3. Spoon 1/4 cup ground beef mixture into each pasta shell. Arrange stuffed shells in a serving dish and top with pasta sauce and Parmesan cheese.
