1 cup water
1 skinless, boneless chicken breast, cut into bite-sized chunks
2 tomatoes, cut into wedges
1 fresh red chile pepper, chopped
½ cup peas
½ cup diced carrot
½ cup corn kernels
½ cup tomato sauce
2 tablespoons chili sauce
3 eggs, beaten
1 (16 ounce) package fresh egg noodles, cut into short strands

Directions

  1. Heat the oil in a large, deep skillet or wok over medium heat, cook the onions in the hot oil until softened, about 5 minutes. Add the potato, soy sauce, and water, simmer until the potatoes are nearly cooked through, about 15 minutes. Stir the chicken, tomatoes, chile pepper, peas, carrot, corn, tomato sauce, chili sauce, and eggs into the mixture, toss to combine. Cook and stir until heated through, about 10 minutes. Add the noodles and continue cooking until the noodles soften, 2 to 3 minutes more. Serve hot.

Recipe Note

Mee' is noodles and 'goreng' means fry in Malay (Berhasa). This is a favourite dish of southeast Asians. The amount of tomato and chilli sauce can be adjusted to your taste. Bean sprouts, snowpeas, and even shrimp are also great in this dish.
