Maple-Bacon Snap Peas recipe

1 tablespoon minced shallot
1 teaspoon vegetable oil
2 cups sugar snap peas, strings removed
2 tablespoons maple syrup
½ tablespoon lemon juice
salt and ground black pepper to taste

Directions

  1. Heat a large frying pan over high heat. Add bacon and saute until fat is rendered, 2 to 5 minutes. Stir in red pepper flakes, cook for 1 minute. Add shallot and saute for 1 minute. Pour in oil, heat through, and toss in snap peas. Cook, without stirring, until lightly blackened, 3 to 5 minutes. Drizzle in maple syrup, stir to coat, and saute for 2 minutes. Mix in lemon juice and season with salt and pepper.
