½ pound kielbasa sausage, chopped
1 (8 ounce) package sliced fresh mushrooms
1 (8 ounce) jar roasted red peppers, drained and chopped
½ medium onion, diced
3 cloves garlic, minced
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes
4 ounces tomato paste
1 tablespoon Italian seasoning

Directions

  1. Cook kielbasa sausage in a deep nonstick skillet or frying pan over medium heat for 1 minute. Add mushrooms, roasted red peppers, onion, and garlic. Stir and cook until onion is tender, about 5 minutes.

  2. Drain grease from the sausage mixture and return to the skillet.

  3. Mix together tomato sauce, diced tomatoes, tomato paste, and Italian seasoning in a medium bowl and pour over the sausage mixture in the skillet. Stir and simmer, covered, over medium-low heat until heated through, about 10 minutes.
