2 tablespoons unsalted butter
¼ cup chopped red bell pepper
¼ cup chopped celery
3 cups chicken stock
1 cup chopped cauliflower
1 (8 ounce) can baby clams
6 medium shrimp
6 slices bacon, cooked and crumbled
1 teaspoon seafood chowder spice (such as St. Jean's®)
8 spears asparagus, chopped
½ cup light cream (table cream)
salt and ground black pepper to taste

Directions

  1. Melt butter in a saucepan over medium heat and add bell pepper and celery. Cook and stir until softened, about 5 minutes. Add chicken stock and bring to a boil. Reduce heat to a simmer and add cauliflower, clams, shrimp, bacon, and seafood spice. Simmer gently for 15 minutes. Add asparagus and simmer until just tender, about 5 minutes more.

  2. Divide chowder between 2 soup bowls and add cream to each. Season with salt and pepper.
