Ingredients

2 pounds ground pork
2 large onions, chopped
½ red bell pepper, chopped
salt to taste
8 cups cold water
1 ½ cups masa harina (corn flour)
1 cup strong brewed coffee
⅓ cup chili powder
3 tablespoons ground cumin
2 tablespoons garlic powder
2 tablespoons salt, or to taste
1 tablespoon oregano
1 tablespoon ground black pepper
1 (32 ounce) can chili beans
1 (32 ounce) can tomato juice
2 (8 ounce) cans tomato sauce
1 pound smoked sausage, diced
½ cup brown sugar

Directions

  1. Heat a large pot over medium heat, cook and stir ground pork, onions, and bell pepper until pork is no longer pink, 5 to 7 minutes. Season with salt to taste and drain.

  2. Combine water, masa harina, coffee, chili powder, cumin, garlic powder, salt, oregano, and black pepper in a large bowl, stir until smooth. Pour coffee mixture into ground pork mixture and add tomato juice and tomato sauce, bring to a boil. Stir in smoked sausage and brown sugar. Cover and reduce heat to medium-low. Simmer for 4 hours, stirring often.
