Ingredients

2 cups frozen green beans
1 (10.75 ounce) can cream of celery soup
1 cup sour cream
1 cup frozen shoepeg corn
1 (8 ounce) package shredded Cheddar cheese
1 (4 ounce) can sliced water chestnuts, drained
1 teaspoon lemon juice
1 sleeve buttery round crackers (such as Ritz®), crushed
¼ cup butter, melted

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Mix green beans, celery soup, sour cream, shoepeg corn, Cheddar cheese, water chestnuts, and lemon juice together in a bowl, spread into a casserole dish.

  3. Mix crackers and butter together in a bowl, sprinkle over the casserole.

  4. Bake in preheated oven until hot and bubbly, about 45 minutes.

I've been making this recipe for over 30 years, and it's always a hit. My husband likes it so much we call it 'Jim's Casserole' at our house. It's a great alternative to green bean casserole at Thanksgiving.
