2 jicama, peeled and cut into matchsticks
2 cups carrots, shaved into strips using a vegetable peeler
1 cup fresh pea shoots
1 avocado - peeled, pitted, and sliced
½ cup cooked quinoa
1 tablespoon chopped fresh cilantro, or to taste

Directions

  1. Beat olive oil, lime juice, lime zest, ginger, honey, sesame oil, and salt together in a bowl with a hand mixer until dressing is thick and creamy.

  2. Stir jicama, carrots, pea shoots, avocado, quinoa, and cilantro together in a large bowl, pour dressing over the top and toss to coat.
