1 (28 ounce) can diced tomatoes, drained
2 tablespoons tomato paste
2 tablespoons grated fresh ginger
1 tablespoon curry powder
½ teaspoon kosher salt
ground black pepper
1 small head cauliflower, cored and cut into florets
1 ½ pounds skinless, boneless chicken thighs, cut into halves
1 onion, finely chopped
¼ cup raisins
½ cup chopped fresh cilantro, for garnish

Directions

  1. Stir tomatoes, tomato paste, ginger, curry powder, kosher salt, and black pepper together in a slow cooker crock until smooth, add cauliflower, chicken, onion, and raisins and stir.

  2. Cook on Low until the chicken is cooked through, 6 to 7 hours (or on High for 4 to 5 hours). Garnish with cilantro.
