Ingredients

2 cups rolled oats
1 cup peanut butter
⅔ cup honey
½ cup dark chocolate chips
½ cup ground flax seeds
½ cup chocolate-flavored protein powder
½ cup unsweetened shredded coconut
2 tablespoons chia seeds
1 teaspoon coconut extract
¼ cup chopped coffee beans
2 tablespoons cocoa powder (such as Fry's®), or more as needed

Directions

  1. Mix oats, peanut butter, honey, dark chocolate chips, flax seeds, protein powder, coconut, chia seeds, and coconut extract together in a large bowl, fold in coffee beans. Form mixture into 1-inch balls.

  2. Place cocoa powder in a small bowl. Roll each ball in the cocoa powder until coated.
