Directions

  1. Preheat the oven to 425 degrees F (220 degrees C). Spray a 12-cup muffin tin with cooking spray or line with paper liners.

  2. Combine oat bran, flour, brown sugar, baking powder, pumpkin pie spice, baking soda, and salt in a bowl and mix thoroughly.

  3. Combine milk, molasses, egg, vegetable oil, and vanilla extract in a separate bowl and mix well. Stir into dry ingredients until just moistened. Add pumpkin puree and mix just enough to evenly distribute, do not overstir.

  4. Spoon batter into the prepared muffin cups, filling each 3/4 full.

  5. Bake in the preheated oven until golden brown, 15 to 17 minutes.
