1 onion, chopped
2 stalks celery, chopped
⅓ cup packed baby spinach, chopped
4 cups water
1 (8 ounce) container medium-firm tofu, diced into small cubes
⅔ teaspoon salt
5 tablespoons white miso paste
ground black pepper to taste
chili powder to taste

Directions

  1. Heat olive oil in a saucepan over medium heat. Add onion, celery, and spinach. Cook and stir until just softened, about 3 minutes. Pour in water, add tofu and salt. Reduce heat to medium-low, simmer until heated through, about 8 minutes.

  2. Stir in miso, simmer until dissolved, about 5 minutes. Season with ground black pepper and chili powder.
