Easy Summer Gazpacho recipe

24 ounces water
3 tablespoons fresh lemon juice
2 tablespoons granulated sugar
Hot pepper sauce, to taste
1 tablespoon extra-virgin olive oil
1 medium fresh tomato, chopped
½ cup chopped red bell pepper
½ cup chopped yellow bell pepper
¼ cup diced red onion
1 ½ cups diced English cucumber
¼ cup chopped fresh basil
Salt and freshly ground black pepper, to taste
1 tablespoon Fresh chopped parsley, for garnish

Directions

  1. Combine tomato and basil sauce, water, lemon juice, sugar, hot sauce, and olive oil in a large bowl. Stir in the tomato, red and yellow bell pepper, red onion, and cucumber. Add the basil, salt, and pepper.

  2. Cover and refrigerate 2 to 3 hours to blend flavors.

  3. Stir before serving. Top with fresh chopped parsley.
