2 medium ripe tomatoes, seeded and coarsely chopped
2 tablespoons olive oil
3 cloves garlic, minced
6 leaves fresh basil, thinly sliced, or more to taste
salt and ground black pepper to taste
2 tablespoons shredded Parmesan cheese, or to taste

Directions

  1. Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes.

  2. Combine tomatoes, olive oil, garlic, and basil in a bowl. Season with salt and pepper. Drain pasta, add to the bowl, and toss well with the tomato mixture. Top with Parmesan cheese and a few additional grinds of pepper.
