6 dried red dates, rinsed
1 tablespoon goji berries, rinsed
1 tablespoon vegetable oil
2 carrots, sliced
4 slices fresh ginger
1 teaspoon salt
½ teaspoon vegetable stock powder
½ teaspoon sesame oil
ground black pepper to taste
1 bunch watercress

Directions

  1. Bring water to a boil in a large pot, stir in red dates and goji berries.

  2. Heat oil in a skillet over medium heat. Cook and stir carrots, ginger, and salt for 1 minute. Transfer to the pot of water. Stir in vegetable stock powder, sesame oil, and black pepper. Reduce heat to medium-low and add watercress, simmer until wilted, about 15 minutes.
