Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.

  2. Place pumpkin in a large bowl. Add 1/2 cup flour at a time, mixing well between additions. Stir in grated carrot. Drop in small spoonfuls on the prepared baking sheet and flatten slightly.

  3. Bake in the preheated oven until edges are set, about 20 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.
