¼ cup Brazil nuts
¼ cup soy nuts
½ cup grated Parmesan cheese
2 tablespoons ground flax seeds
1 tablespoon lemon juice
4 cloves garlic, crushed
1 teaspoon lime juice
1 teaspoon chile powder
1 bunch chopped fresh cilantro
¼ cup olive oil, or as desired

Directions

  1. Chop Brazil nuts and soy nuts in a food processor. Add Parmesan cheese, ground flax seeds, lemon juice, garlic, lime juice, and chile powder, pulse until combined. Add cilantro, pulse until finely chopped. Add olive oil, process on low speed until a thick sauce forms.

The story of this recipe is that I broke a compact fluorescent light bulb, which has a high mercury content, and I was looking into ways to detox or prevent mercury poisoning symptoms. The cilantro and garlic help to detox mercury, the Brazil nuts replace your selenium stores, and the flax seeds add fiber to work everything through your system. I got all the ingredients together and figured out a delicious way to eat it all! I chop up tomatoes and spoon the pesto mixture over bread or crackers to make a bruschetta.
