Ingredients

2 ¼ cups water
1 ½ cups long-grain white rice
1 tablespoon olive oil
4 green onions, chopped
2 cloves garlic, crushed
1 (10 ounce) bag fresh spinach
⅓ cup chopped fresh dill
2 tablespoons pine nuts
1 (4 ounce) package crumbled feta cheese
2 tablespoons chopped fresh mint, or to taste
1 lemon, zested and juiced
1 teaspoon sumac

Directions

  1. Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 20 to 25 minutes.

  2. Heat oil in a large skillet over medium heat. Add green onions and garlic, cook and stir until softened, about 5 minutes. Stir in spinach and dill until wilted, 3 to 5 minutes. Stir in cooked rice. Transfer to a large serving dish.

  3. Heat a small skillet over medium heat. Add pine nuts, cook and stir until toasted, 3 to 5 minutes.

  4. Top rice with toasted pine nuts, feta cheese, mint, lemon zest, lemon juice, and sumac.
