1 tablespoon vegetable oil
1 cup sliced fresh mushrooms
1 tablespoon chopped garlic
3 cups fresh spinach
2 tablespoons soy sauce
1 ½ tablespoons curry powder
1 teaspoon red pepper flakes

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Spray a baking sheet with baking spray, arrange tofu in a single layer.

  2. Bake tofu in preheated oven until evenly browned, flipping after 10 minutes, about 20 minutes total.

  3. Heat vegetable oil in a wok or large skillet over medium-high heat. Add mushrooms and garlic, cook and stir until mushrooms are tender, 2 to 3 minutes. Add tofu, spinach, soy sauce, and curry powder, cook and stir until spinach is wilted, 3 to 5 minutes. Sprinkle red pepper flakes over mixture.

I was looking for a tasty way of getting a protein packed lunch with some healthy greens. Added curry and came up with this. Even my 3-year-old loved it!
