1 cup butter
6 tablespoons coconut oil
¾ cup packed brown sugar
1 tablespoon packed brown sugar

3 cups quick-cooking oats
1 cup dark chocolate chips

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Combine butter and coconut oil in a saucepan over medium-low heat, cook until melted, 2 to 3 minutes. Set aside to cool.

  3. Mix 3/4 cup plus 1 tablespoon brown sugar, white sugar, eggs, and vanilla extract together in a mixing bowl.

  4. Combine flour, baking soda, and salt in a separate bowl. Add to egg mixture, mixing well. Stir in oats and chocolate chips.

  5. Roll heaping tablespoonfuls of cookie dough into balls. Place 2 inches apart on ungreased cookie sheets.

  6. Bake in the preheated oven until edges are set, about 12 minutes. Cool on the cookie sheets for 2 minutes, then transfer to wire cooling racks.
