Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch cast iron skillet with margarine.

  2. Combine sugar and eggs in a large bowl, beat with an electric mixer until creamy. Mix in pureed peaches and baking mix until combined. Add vanilla extract and stir until well blended. Pour into the prepared skillet.

  3. Bake in the preheated oven until top is golden brown, 45 to 55 minutes.
