Brazilian Grilled Salmon With Mango Salsa recipe

Ingredients

1 cedar plank
1 teaspoon vegetable oil
2 large ripe mangoes, finely chopped
1 red onion, chopped
1 small bunch cilantro, coarsely chopped
1 jalapeno pepper with seeds, chopped, or more to taste
½ lime, juiced
1 splash olive oil
1 splash orange juice
1 pinch salt and ground black pepper to taste
1 (1.5 pound) skin-on salmon fillet

Directions

  1. Place cedar plank on a rimmed baking sheet. Cover with water. Let soak, at least 4 hours. Drain, rub one side with 1 teaspoon vegetable oil.

  2. Combine mangoes, onion, cilantro, jalapeno pepper, lime juice, olive oil, orange juice, salt, and pepper in a large bowl, mix thoroughly.

  3. Season salmon with salt and pepper. Place on the oiled side of the cedar plank and cover with mango mixture.

  4. Turn the burners on one side of an outdoor grill to high heat, and the other side to low heat.

  5. Transfer cedar plank to the side of the grill preheated to low heat. Close grill and cook, checking often and spraying plank with water if needed, until salmon flakes easily with a fork, 30 to 40 minutes.

I once went to a fabulous Brazilian restaurant, where they made something similar to this recipe. I recreated it, with some tweaking, to rave reviews. Drizzle with warm coconut cream before serving if desired.
