Directions

  1. Mash bananas in a bowl with sugar and vanilla extract. Add whole wheat flour, 1 cup all-purpose flour, and baking soda. Mix until dough stiffens, adding additional all-purpose flour as needed.

  2. Roll into 1 1/2-inch thick strands of dough. Cover with a dish towel and let sit out, 8 hours to overnight.

  3. Preheat the oven to 350 degrees F (175 degrees C). Grease 2 cookie sheets with cooking spray.

  4. Cut cookies into 1- to 2-inch pieces and place on the prepared cookie sheets.

  5. Bake in the preheated oven until hard and golden, 12 to 15 minutes.

Babies love these. You could make shapes if you want, but I like to keep in mind that I'm cooking for a baby who is going to make a gooey mess out of these. Perfection is completely unnecessary.
