3 radishes, sliced
1 tomato, sliced
1 small avocado, peeled, pitted, and chopped
1 slice ham, chopped

Directions

  1. Toss Romaine lettuce, mixed salad greens, arugula, mixed beans, cucumber, sweet red pepper, radishes, tomato, avocado, and ham together in a large bowl. Serve cold.

Recipe Note

This is really light and refreshing. It's also very filling. The mixed beans I used were left over from the night before, but if you are making them fresh, soak them overnight in water, then boil for at least 20 minutes. Leave to cool before adding to the salad.
