½ cup creamy peanut butter

1 lime, juiced
1 tablespoon soy sauce
salt and ground black pepper to taste
½ cup chopped peanuts

Directions

  1. Combine cabbage, scallions, carrot, and cilantro in a large bowl. Mix together vinegar, peanut butter, sesame oil, ginger, lime juice, and soy sauce in a second bowl until well combined, season with salt and pepper.
